  •  Parchment paper or silicone baking mat (to line the baking sheet)
  •  Spoon or cookie scoop (for portioning out the dough)
  • Cooling rack (for cooling the cookies)

Ingredients
  

  • 1/4 cup coconut oil
  • 1/4 cup maple syrup (add 2-3 tbsp for sweeter cookies)
  • 1 tsp pure vanilla extract
  • 1 cup blanched almond flour
  • 3/4 cup oat flour
  • 1/4 cup arrowroot powder
  • 1/2 tsp salt
  • 1/4 tsp apple cider vinegar
  • 1/2 tsp baking soda

Instructions
 

  •  Preheat your oven to 325°F and line a baking sheet with parchment paper.
  •  In a mixing bowl, whisk together the coconut oil, maple syrup, and vanilla extract until well combined.
  • Add the almond flour, oat flour, arrowroot powder, salt, apple cider vinegar, and baking soda to the bowl. Mix until a dough forms.
  • Using a spoon or cookie scoop, portion out the dough and roll it into balls. Place them onto the prepared baking sheet and flatten them slightly with your fingers.
  • Bake for 8=10 minutes, or until the edges are golden brown. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
