Sopa De Fideo (Healthy Mexican Noddle Soup GF)

Sopa de fideo is a easy and cozy Mexican soup thats perfect for anyday made with tomatoes,garlic, noodles just ahrdly soup that can be made vegan or with chicken.
Ingredients
1/2 Small white onion
3 Roma tomatoes quartered
2 Garlic cloves
1 cup Chicken or Vegetable stock, or Water
1 Tsp Oregano
1 bay leaf
2 Tbs oil Avocado Oil or coconut oil
Shell pasta
3 cups Chicken or Vegetable broth, or Water
Vegetable of choice I used yellow squash
Bouillon to taste
Salt to taste add last
If soup is too thick add water, add a little water to thin it out.
Instructions
- Add tomotoes,garlic,cumin,salt, 1 cup water blend and set aside
- Heat a pot over medium head add oil and fideo to the hot oil till its golden brown becareful you dont burn stir constanlty
- Add squash lower the heat add tomatoe juice
- add rest of water along with bay leaf boullion
- Increase the heattill simmer, lower and cover and cook for 20-30 minutes till pasta is ready since gluten free the texture is different keep an eye taste to your liking, if salt neede add more.
- Remove bay leaf and enjoy with lemon or your favorite toppings.
