Sopa De Fideo (Healthy Mexican Noddle Soup GF)

Prep time: 15 minutes | Cook time 30 minutes | Servings 4-6

GLUTEN & DAIRY FREE  

Sopa de fideo is a easy and cozy Mexican soup thats perfect for anyday made with tomatoes,garlic, noodles just ahrdly soup that can be made vegan or with chicken.


Ingredients

1/2 Small white onion
3 Roma tomatoes quartered

2 Garlic cloves

1 cup Chicken or Vegetable stock, or Water 

1 Tsp Oregano 

1 bay leaf

2 Tbs oil Avocado Oil or coconut oil 

 Shell pasta 

3 cups Chicken or Vegetable broth, or Water 

Vegetable of choice I used yellow squash

Bouillon to taste 

Salt to taste add last 

If soup is too thick add water, add a little water to thin it out.


Instructions
  1. Add tomotoes,garlic,cumin,salt, 1 cup water blend and set aside
  2. Heat a pot over medium head add oil and fideo to the hot oil till its golden brown becareful you dont burn stir constanlty
  3. Add squash lower the heat add tomatoe juice
  4. add rest of water along with bay leaf boullion
  5. Increase the heattill simmer, lower and cover and cook for 20-30 minutes till pasta is ready since gluten free the texture is different keep an eye taste to your liking, if salt neede add more.
  6. Remove bay leaf and enjoy with lemon or your favorite toppings.
