Pumpkin Pie (Gluten,Dairy Free,Paleo)

 

Ingredients

CRUST

1 1/4 cup gluten free flour

1/4 tsp pink salt

6 Tbsp cold vegan butter

4-6 Tbsp ice cold water

FILLING

2 3/4 cups pumpkin puree

1/4 cup maple syrup

1/4 cup coconut sugar

1/3 c plant milk

1/2 vanilla powder

1/4 turmeric powder

1 Tbsp refined coconut oil (or olive oil

2 1/2 Tbsp arrowroot powder

1 1/2 tsp pumpkin spice

1/4 tsp pink salt

2 eggs ( omit to make vegan)

Instructions

  1. To make the pie crust add all in to a big bowl once all is mix add cold butter and combine slowly with a pastry cutter , next you will add ice cubes little at a time. about 4-5 tablespoons
  2. Once your dough is formed you can wrap in plastic wrap then press with your hands to form a falt crust about 1/2 inch set in fridge for about 35 minutes.
  3. Once your pie crust is chill you can preheat ovean at 350 degrees
  4. Start preparing filling, put all ingredients in blender or mixer till smooth, set aside for later use
  5. For crust take out of fridge you can use parchemt paper to roll your dough so its easy to roll be gentle, now treansfer to your baking dish if you get cracks its ok due this crust is more delicate.
  6. Pour your filling in to cryst and bake for about 1 hour till it has its golden brown color, once out of oven let it cool completely before you set in fridge for about 7 hours or over night before serving.
  7. Now enjoy woth some whipped cream or yogurt
