Pumpkin Arroz con leche Mexican rice pudding ) with a little twist, hot or cold it’s a must have at our home! Arroz con leche is a popular sweet dessert in Mexico.
One of my childhood’s favorites, this recipe is so dreamy and creamy let me say I gave it a twist to your traditional arroz con leche, I love pumpkin and felt those to combos together would blend so well together! Warning, you’ll be asking for more!
How to make pumpkin rice pudding
Pumpkin Mexican rice pudding
3/4 c pumpkin purée
1/2 c coconut condensed milk
1 cinnamon stick
2 c white rice (or your choice)
1/2 c coconut cream*
1 tsp Vanilla (I used powdered)
1/8 tsp turmeric, ginger powder
1/2 tsp pumpkin powder
4 c plant milk
2 c water
1/2 c coconut sugar ( add condensed first and just keep adding coconut sugar to your sweet preference, I liked it like this so perfect)
- In a pot add rice, plant milk, water, cinnamon stick, sugar, coconut cream let it simmer
- while the rice is cooking add ginger powder, pumpkin powder, turmeric powder, vanilla, pumpkin puree,condensed milk, mix till all is combined
- cover, let it cook for about 20-30 minutes, turn off and let it cool! You have it hot or cold. Enjoy
