Ingredients
Crust
- 2 ½ c Rolled oats
- ½ c Coconut oil
- 7-10 Pitted dates
- pinch Salt
- splash Water if needed
Cheesecake filling
- 2 c Cashews soaked at least 4 hours or overnight
- ¼ c Rresh lime juice
- ½ c Canned full-fat coconut milk i used the thick cream part only, save the coconut water for smoothies
- 1 c Fresh or frozen blueberries
- ¼ c Refinded coconut oil melted
- ¼ c Maple or honey
Instructions
HOW TO MAKE RAW CHEESECAKE
- Combine all the crust ingredients in a bowl mix well till turns to dough.
- Press the crust into bar molds, if dont have any you can use ay mold you would like to make a big cheesecake.
- Add the cheesecake filing ingredients to a blender or food processor EXPECT the COCONUT OIL.
- Taste to liking if more sweetner needed add more
- Now pour the cheesecake filling into mold set in freezer for about 45 or over night.
- For serving take out 15 minutes before serving and enjoy
