Loaded Sweet Potato with Chicken and Roasted Bell Peppers Gluten F

 

This recipe features tender baked sweet potatoes topped with flavorful chicken, sautéed veggies, and melted vegan cheese. It’s hearty, healthy, and perfect for an easy dinner or meal prep.

 

Ingredients
  

  • For the Sweet Potatoes:
  • 4 small to medium sweet potatoes scrubbed clean
  • Olive oil or avocado oil for brushing
  • For the Chicken and Veggies:
  • 1.5 lbs chicken breast diced into cubes
  • 2 tbsp Loiza seasoning or your favorite spice blend
  • 2 tbsp avocado oil
  • 1 red bell pepper cubed
  • 1 green bell pepper cubed
  • 1 small red onion cubed
  • 2 cloves garlic minced
  • 1 jalapeño finely chopped (optional for heat)
  • 4 tbsp Loza sauce or another preferred sauce
  • For Topping:
  • Vegan cheese shredded
  • Optional: Fresh cilantro or parsley for garnish

Instructions
 

  • Bake the Sweet Potatoes
  • Preheat your oven to 400°F (200°C).
  • Pierce the sweet potatoes a few times with a fork, then brush lightly with oil.
  • Place them on a baking sheet and bake for 40-50 minutes, or until tender when pierced with a knife.
  • Prepare the Chicken and Veggies
  • In a large bowl, combine diced chicken, Loisa seasoning, and avocado oil. Toss to coat evenly.
  • Heat a large skillet over medium heat. Add the seasoned chicken and cook for 6-8 minutes, or until fully cooked and golden. Remove from the skillet and set aside.
  • In the same skillet, add the bell peppers, onion, garlic, and jalapeño. Sauté for 3-4 minutes until softened.
  • Return the chicken to the skillet, add Loisa sauce, and stir to combine. Cook for another 2-3 minutes. Taste and adjust salt if needed.
  • Assemble the Loaded Sweet Potatoes
  • Once the sweet potatoes are baked, carefully slice them open lengthwise and fluff the insides with a fork.
  • Spoon the chicken and veggie mixture over the top of each sweet potato.
  • Add Cheese and Bake
  • Sprinkle vegan cheese on top of the loaded sweet potatoes.
  • Return to the oven for 5 minutes, or until the cheese is melted and slightly crispy.
  • Serve and Enjoy
  • Garnish with fresh cilantro or parsley if desired, and serve warm.
