Ingredients
  

  • 1 bag of tamarinds
  • 1.5 cups of hibiscus flowers
  • 6 large apples
  • 10 to 15 mini apples
  • 4 cloves
  • 2 large navel oranges
  • 3 yellow pears
  • 2 cinnamon sticks
  • 2 canela bags cinnamon
  • 50 tecojotes a small wild fruit often found in Mexican ponche
  • 1 cup of coconut sugar
  • Maple syrup to taste optional
  • 2 anise stars
  • 12 guavas
  • 20 cups of filtered water
  • 1 cup of raisins
  • 5 pitted dates optional
  • 5 dates for a natural sweetener
  • 1 thumb of ginger for its anti-inflammatory properties
  • 1 thumb of turmeric for added health benefits
  • A dash of cayenne pepper to activate the turmeric and enhance the anti-inflammatory effects

Instructions
 

  • Start by placing all the tamarinds, hibiscus flowers, apples (both large and mini), pears, guavas, and tecojotes into a large pot.
  • Add the filtered water (20 cups) to the pot, then bring it to a boil over medium heat.
  • Once boiling, reduce the heat and simmer for about 30-45 minutes until the fruit softens.
  • Add the cinnamon sticks, canela bags, cloves, anise stars, raisins, and dates to the mix.
  • Continue simmering for another 15-20 minutes, allowing the spices to infuse the liquid.
  • While the mixture is simmering, peel and grate the ginger and turmeric thumb. Add them to the pot, followed by the dash of cayenne pepper.
  • For sweetness, stir in coconut sugar and maple syrup to taste, depending on your preference.
  • Once everything is well combined and fragrant, remove the pot from the heat and let it sit for about 10 minutes to let the flavors meld together.
  • Serve warm in mugs or heat-proof glasses, and enjoy!
