Easy Homemade Chipotle Pollo Asado Recipe

  • - 1/4 tsp cayenne pepper adjust to taste for spice level
  • - 1/8 tsp chile piquin optional, for extra heat
  • - Salt and freshly ground black pepper to taste
  • - 1 ripe mango peeled and diced
  • - 2 lbs boneless skinless chicken breasts
  • - Juice of 1-2 lemons
  • - 1/2 cup fresh cilantro leaves chopped
  • - 1/2 cup red onion finely diced
  • - 2 jalapeño peppers seeded and finely diced
  • - 2 tbsp olive oil divided
  • - Juice of 1 orange

Instructions
 

  • Prepare Chipotle Pollo Asado Paste:
  • - In a blender or food processor, combine chipotle peppers in adobo sauce (adjust quantity to your spice preference), dried oregano, minced garlic, ground cumin, ginger powder, lemon pepper seasoning, cayenne pepper, chile piquin (if using), salt, and black pepper. Blend until smooth to create a vibrant paste.
  • Marinate the Chicken:
  • - Place the chicken breasts in a large resealable bag or shallow dish. Pour the chipotle pollo asado paste over the chicken, ensuring all pieces are coated evenly. Seal the bag or cover the dish and refrigerate for at least 1 hour, ideally up to 4 hours, to allow the flavors to meld.
  • Prepare Mango Salsa:
  • - In a mixing bowl, combine diced mango, chopped cilantro leaves, finely diced red onion, diced jalapeño peppers (adjust amount based on desired spice level), juice of 1 orange, and a tablespoon of olive oil. Mix well and season with salt and pepper to taste. Set aside to let the flavors meld while the chicken marinates.
  • Grill the Chicken:
  • - Preheat the grill to medium-high heat. Brush the grill grates with olive oil to prevent sticking.
  • - Remove the marinated chicken from the bag or dish, shaking off excess marinade. Discard any remaining marinade.
  • - Grill the chicken breasts for about 6-7 minutes per side, or until fully cooked through and internal temperature reaches 165°F (74°C). Cooking time may vary depending on the thickness of the chicken breasts. Ensure the chicken gets nice grill marks and caramelization for added flavor.
  • Serve:
  • - Once grilled, let the chicken rest for a few minutes before slicing it against the grain.
  • - Serve the grilled chipotle pollo asado chicken with a generous spoonful of mango salsa on top. Garnish with extra cilantro leaves if desired.
