Instructions
 

  • Preparation: Begin by chopping all the vegetables—dice the tomatoes, onion, jalapeno, cucumber, bell pepper, and cilantro. Drain and rinse the canned corn.
  • Mixing: In a large mixing bowl, combine the chopped vegetables, drained corn, and tuna (flaked with a fork).
  • Dressing: In a separate bowl, mix vegan mayo with salt, pepper, and lemon juice to taste. For an extra kick, add a splash of jalapeno juice.
  • Combine: Pour the mayo dressing over the vegetable and tuna mixture. Gently toss until everything is evenly coated with the dressing.
  • Chilling:Refrigerate the salad for at least a couple of hours before serving. This allows the flavors to meld together beautifully. However, if you can't wait, it's still delicious right away!
