I’m excited to share this amazing Frozen Cucumber-Lime Sorbet with you. It brings back fond memories of my childhood trips to Mexico when I was about eight years old. My parents would take me to a local ice cream store, and I loved their lime ice cream. It had a cool, smooth style that stuck with me.
Now, I make this sorbet at home, and it always reminds me of those fun times. This version is healthier, diabetic-friendly, free from extra additives, and kid-friendly too. If you like a bit of spice, you can add some Tajín.
Ingredients

- - 4 limes juiced

- - Sweetener to taste I prefer honey, but you can use agave syrup, maple syrup, monk fruit sweetener, or your favorite sweetener
Instructions
- Prepare the Cucumbers: Peel the cucumbers if you prefer a milder taste, but you can leave the skin on for added nutrients. Remove the seeds if desired. Chop the cucumbers and place them in the freezer until frozen solid.
- Blend: In a food processor or high-speed blender, combine the frozen cucumber chunks, lime juice, salt, and your chosen sweetener. Blend until smooth and creamy.
- Taste and Adjust: Taste the mixture and adjust the sweetness or tartness to your liking. Add more sweetener or lime juice if needed.
- Serve: Scoop the sorbet into bowls and enjoy! For a spicy twist, sprinkle with Tajín before serving. "I Love Chamoy" is also a great option to enhance the flavor with a diabetic-friendly touch.
