Easy Cilantro Lime Rice Chipolte Copy Cat

Ingredients
  

  • - 2 cloves garlic minced
  • - 1/2 cup diced white onion or 1 shallot
  • - 2 cups Jasmine rice
  • - 2 tablespoons unsalted vegan butter or avocado oil
  • - 1/2 teaspoon ground cumin
  • - 1/2 teaspoon garlic powder
  • - Salt and pepper to taste
  • - 1 bay leaf
  • - 3 cups low-sodium chicken broth or water
  • - Juice of 2 limes
  • - Zest of 1-2 limes
  • - 1/4-1/2 cup fresh cilantro chopped

Instructions
 

  • Sauté Aromatics:
  • - In a large saucepan or Dutch oven, melt the butter over medium heat. Add minced garlic and diced onion (or shallot). Sauté for 2-3 minutes until softened and fragrant.
  • Toast Rice and Spices:
  • - Add the Jasmine rice to the pan and stir to coat with the butter and aromatics. Cook for another 2 minutes, stirring frequently, until the rice becomes slightly translucent.
  • Season the Rice:
  • - Stir in the ground cumin, garlic powder, salt, and pepper. Toast the spices with the rice for about 1 minute to enhance their flavors.
  • Cook with Broth:
  • - Add the bay leaf and pour in the chicken broth (or water). Bring to a boil, then reduce the heat to low. Cover the pan and simmer for 15-20 minutes, or until the rice is tender and liquid is absorbed.
  • Fluff and Add Citrus Zest:
  • - Once the rice is cooked, remove the pan from heat. Let it sit covered for 5 minutes. Then, fluff the rice with a fork. Add the lime juice and lime zest, stirring gently to incorporate.
  • Add Fresh Cilantro:
  • - Fold in the chopped fresh cilantro, reserving some for garnish if desired. This adds a fresh, vibrant flavor to the rice.
